Serves 2
Ingredients :
250g chicken breast
1 onion
150g mushrooms
200g risotto rice
1 tin chopped tomatoes
Oregano
1 teaspoon garlic puree
1 pint chicken stock
1 red pepper
Salt & pepper
Olive oil
Recipe :
1. Heat the olive oil in a pan and fry the onion until soft, followed by the mushroom and red pepper
2. Add the garlic puree and then the chicken which should be fried until it’s brown
3. Add the rice and fry it until it starts to crack
4. Add the chicken stock bit by bit and add water if necessary until the rice is cooked
5. Add chopped tomatoes and allow to simmer for 10-15
6. Finally, add the salt, pepper and oregano
