Chicken and tomato risotto

 

Serves 2

 

Ingredients :
250g chicken breast
1 onion
150g mushrooms

200g risotto rice

1 tin chopped tomatoes

Oregano

1 teaspoon garlic puree

1 pint chicken stock

1 red pepper

Salt & pepper

Olive oil

Recipe :

1. Heat the olive oil in a pan and fry the onion until soft, followed by the mushroom and red pepper

2. Add the garlic puree and then the chicken which should be fried until it’s brown

3. Add the rice and fry it until it starts to crack

4. Add the chicken stock bit by bit and add water if necessary until the rice is cooked

5. Add chopped tomatoes and allow to simmer for 10-15

6. Finally, add the salt, pepper and oregano

A blender is possibly the kitchen accessory of the moment. Making soups is no longer a thing of the past and something only your Granny does. Some recipes are really simple and those with any type of vegetables in are a great way to get your five a day. As are smoothies. Any left over fruit needn’t been thrown away if you have a blender. Simply stick it all in with some fruit juice or milk along with ice and you have a healthy drink that you’d have to pay a fortune for in a cafĂ©.
